PUMPKIN SMORES COOKIES
You guys already know I’m obsessed with pumpkin, no surprise there! 🎃 And there’s no better way to make a recipe perfect than to make it, again and again, until you nail it. This time I NAILED IT. Sharing recipe with you for my *PUMPKIN SMORES COOKIES* 🍪🤤. Obviously, there’s fudgy chocolate chips in there too…

Ingredients:
1/2 cup unsweetened almond butter
1 egg
3oz pumpkin puree
1 tsp. vanilla extract
1/4 cup almond flour
1/2 cup coconut sugar (or Truvia)
2 tsp. pumpkin pie spice
1/2 tsp. baking soda
1/4 tsp. sea salt
1/2 cup semi-sweet chocolate chips or chunks
1oz mini marshmallows
Preheat oven to 375F and line a baking sheet with parchment paper. In a large bowl mix together almond butter, pumpkin puree, vanilla and egg until well combined. In a separate bowl whisk together almond flour, coconut sugar, pumpkin pie spice, baking soda and salt. Add the dry ingredients to the wet and mix together. Fold in the chocolate chips. 🍪 Make cookie scoops, add marshmallows in there and place them in the baking sheet, leaving enough space between them. Sprinkle extra chocolate chips and marshmallows on each cookie if desired. Bake for 15-20 minutes. Remove from oven, let cool and enjoy!
